The secret is in the filling. Always. The more surprising, aromatic and tantalizing it is to the senses, the more it stimulates our taste buds, demanding we sample it. Our fillings are like a box of surprises in each and every product you enjoy.

Although we always eat with our eyes first, which gets the body to anticipate the desired food, when it comes to desserts with fillings, it’s best to bite into them with eyes closed and enjoy the surprise that is no less than a feast for the palate.
Let’s be honest, fillings have character. They can simply pour out when allowed, or remain firm. Each filling bears its own statement, texture and flavor, of course. Almost like us. It cannot be tamed and forced to do what we want it to; it has its own will.
The idea is to know how to match the type of filling to the type of pastry. Sometimes it requires a few trials to reach the pastry we imagined. The process is worth the investment and time.
A heat-resistant filling means that the filling can take a temperature up to 250⁰C without changing its color, taste, or spilling out. A custard filling, on the other hand, is more delicate and is not heat-resistant, making it suitable for pastry filling only once they are baked.
Intergata manufactures no less than 50 different types of filling that serve the dairy, bakery and pastry industries.

Many good things happen by chance or unintentionally, and chocolate chips seem to be one of them. History has it that Ruth Wakefield, an American chef born sometime in the early 1900’s, who loved inventing recipes, stumbled upon it by chance. She excelled at her inventions and her pastries were desired by many. So whether a fact or a made-up story, depending on who you ask, Ruth and her husband were the owners of a charming hotel in Massachusetts, famous to this day, and Ruth was in charge of the cooking and baking. One day, she wanted to prepare a specific dessert and realized she was left without any baking chocolate, which meant – no dessert.
So what does a creative woman do? She improvises, of course. Instead of the missing chocolate, she decided to substitute it for a bar of semi-sweet chocolate by Nestle. The result, as said, is known to every household.
Rumors traveled across the U.S. about this woman and her cookies, becoming the most favorite treat package for U.S. soldiers during World War Two. The cookie became a symbol.
The Nestle Company realized that her invention was a business goldmine, and for 1 U.S. dollar, bought the rights for her recipe.
Now back to us.
